Christmas, a holiday of delightful meals and gastronomic discoveries, makes us want to be more creative in the kitchen, especially by using cinnamon. It’s your chance to discover these comforting dessert recipes that highlight winter’s star spice.
Social Food “pumpkin spice latte” cheesecake
For the homemade “spiced pumpkin” mix
-4 tablespoons of cinnamon
-2 1/2 teaspoons powdered ginger
-2 teaspoons of powdered coconut
-1 teaspoon allspice
-1 teaspoon ground cloves
-150 gr Speculoos biscuits
-75 g melted butter
-1 pinch pumpkin spice
-300 g fresh cheese
-200 g strained yoghurt
-100 g pumpkin puree (small baby jar for the smart ones 🙂
-2 cases pumpkin spice mix
-115 g fine sugar
-2 leaves of gelatin
For whipped cream
-200 ml liquid cream
Coarsely crush the biscuits, then add the cooled melted butter and brown sugar. Mix well, spread on the bottom of a baking mold and leave to harden in a cool place. Soften the gelatin in a bowl with cold water. Mix cream cheese, yogurt and sugar in a salad bowl. Remove the gelatin from the cold water and strain it, then dilute it with a tablespoon of boiling water and add it to the cheese mixture. Beat everything thoroughly with a whisk. Pour the mixture over the hardened biscuit base and leave it in the fridge for at least 4 hours, overnight is fine. Beat the whipped cream and put it on the cake, finally add the liquid caramel.
Yoni Saada’s cinnamon cream
Contents (for 6 people)
-Full liquid cream 50 cl
– Powdered sugar 40 g
-Cinnamon powder 1 tablespoon. Coffee
1 Place a salad bowl in the freezer for 20 minutes before making the whipped cream.
2 Whisk the cold cream in a cold salad bowl with the powdered sugar and cinnamon, using an electric mixer or by hand.
3 To be consumed with citrus salad (see recipe p.139). Store in a cool place for half a day
